There are two main ways heavy metals can find their way into cacao beans.

Cacao trees absorb minerals from the soil through their roots. In certain regions, the soil naturally contains higher levels of cadmium or other heavy metals because of the local geology. This is not due to any wrongdoing by the farmer. It is simply a natural characteristic of the land.
Environmental Pollution
In other cases, pollution from industrial activity, mining, or contaminated water sources can lead to elevated levels of heavy metals in the soil and air. This is why cacao sourcing matters so much. Choosing growing regions far from industrial contamination and working with farmers who follow clean agricultural practices greatly reduces this risk.
Testing for heavy metals is not just about meeting international food safety standards. It is about building trust. Regulations in the European Union, the United States, and other markets have strict limits on how much cadmium and lead can be present in cacao and chocolate products.
